JOB SUMMARY: Receives verbal and/or written instructions from Supervisor. Understand and operate the controls on all proof (steam) boxes and all ovens. Be able to make appropriate adjustments to temperature, humidity or time to obtain an optimal proof on the product being produced. Be able to make appropriate adjustments to the time, bake temperature and steam delivery of the ovens to obtain an optimal bake on the bread being produced. Monitor the function of any metal detector on the ovens in which you are baking in accordance with the plant HAACP program. Communicate any deviations noted in the bread with the mixer, divider, moulder and oven persons as well as the supervisor. Load the proof box in an orderly manner to maintain optimal proof on the bread and prevent dryness on the surface of the product.   Understand and be able to operate the Tunnel Oven Loader, including selecting the appropriate program for the product to be baked. Transport loaded and empty bread racks from the proof box to the oven loading area and from the oven back to the moulder in a safe and controlled manner so as to minimize disruption to the product and prevent accidents or damage to the racks or other equipment. Maintain the proof box in a clean condition through out the shift and remove any dough stuck to racks as it may occur. Provide instruction / direction to oven persons with regards to then length of product to be baked and with the use of templates determine if bread requires stretching prior to baking. Perform all other duties as may be assigned by the supervisor.




  1. Operates proof boxes, ovens, slitters and Tunnel Oven Loader to produce quality product in accordance with all established specifications:
  1. Must have the ability and knowledge to understand instructions and underlying principles.
  2. Ability and knowledge to follow instructions.
  3. Ability and knowledge to evaluate product condition both before and after baking and make appropriate adjustments to keep it within the products specifications.
  4. Ability and knowledge to monitor the metal detector for proper function and follow established HAACP procedures when deviations are encountered.
  5. Record and maintain record or rotation of racks through the steam box, follow the rotation system to maintain optimal proof

Must be Able to Work Sunday-Friday 9:45am-5:45pm

  1. Physical demands such as:
  1. Pushing / Pulling racks full of product and peel boards, weight of product is in excess of 110 lbs (not including racks and boards)
  2. Must be able to tolerate high heat and humidity in proof boxes and in proximity to baking ovens.
  3. Rolling or pushing full board carts as required.
  4. Keeping work area clean and orderly in keeping with the Employee Area Acceptance Program.
  1. Applicant must demonstrate their ability to maintain production pace while multi tasking, (taking racks to oven, loading proof box, returning racks to moulder, checking metal detector, monitoring bake quality)
  2. Performs all other jobs as assigned.

  1. Must be able to communicate effectively with supervisor and other employees regarding dough conditions and mechanical problems.
  2. Must show up on time and work weekends as scheduled.
  3. Must be able to stand for an 8-hour shift with a 30 minute lunch break.
  4. Must be able to transport multiple racks as needed to maintain production pace.
  5. Must be able to perform the essential job requirements with or without accommodation.
  6. Basic mechanical apptitude.
